Three problems in one bowl
Ceviche packs a trio of dog hazards. First, the fish is functionally raw: lime juice denatures the surface proteins but provides no heat, so the parasites and bacteria that make raw fish a caution food survive the marinade. Second, raw onion runs through nearly every recipe — toxic to dogs, damaging red blood cells with signs that can lag days behind the meal. Third, the chili and concentrated citrus juice are gut irritants that can cause drooling, vomiting and diarrhea on their own, with a hefty salt level rounding things out.
What to do if your dog stole some
A lick or a stray piece of fish is unlikely to cause more than a mild upset in a healthy dog. A proper helping is different: tally the onion content and call your vet, particularly for small dogs. Over the following days, watch for vomiting, lethargy, pale gums or dark urine — the delayed signature of onion toxicity — and treat any of them as a reason to be seen.

If you’re cleaning fish for ceviche anyway, set a piece aside and cook it plain: no marinade, no seasoning, no bones. Plain cooked white fish delivers everything a dog actually wants from your ceviche night.
